I have fond memories, as a boy, of my mother making preparations for and then creating perfect batches of these incredible confections. When I got old enough to help her by stirring the creamy mix as it cooked on our stove, I realized the heart and soul that she poured into every batch. She taught me the secret of the fudge at the age of 12 and it was then that I first learned to make magic happen in the kitchen just as I supposed her mother had taught her when she was a child. My plan was simply to pass down the secret to my kids and to theirs after them.
Over the years, I have had the opportunity to enlighten many of my friends with a batch of fresh homemade pralines. But I've come to realize that many people have not had the opportunity to be so enlightened. The concept of Ruby’s as a business was born out of the desire to share the magic of Ruby’s Gourmet Pralines with all people who can benefit from a small indulgence; a treat for the mouth and the soul. The idea was founded on the realization that Ruby’s delicious confection was special even in the world of pralines ever present in New Orleans – more creamy, more flavorful, more delightful than any other praline on the market.
